My Life

I’ve updated my latest and greatest chili recipe. If you like your chili savory, spicy, and with better than average heat, you’re gonna love this revised addition.

I’ve integrated Chipotle Peppers in Adobo Sauce for extra heat and a wonderful aromatic smoky flavor.

The chipotle peppers can be found in the ethnic or specialty section of your favorite grocer. All it takes is one pepper, about a tablespoon, minced and mixed with tomato paste to add savory flavor to the chili. If you want to add more, then go for it. You will not be disappointed if you love savory and spicy chili.

Here’s Craig’s newly updated Chili recipe.

Tuna Steak marinadeThis week one local grocery store was offering 4oz tuna steaks for a mere $2.00.  They’re trimmed and fresh frozen, making them a good value. Since I haven’t had tuna in a very long time, I bought several portions.

All I need now is a good marinade and a hot grill. Both I have. But as to the former, I wanted something new. Something spicy and savory, easy and full of flavor.

Here’s what I came up with.

Revised:  January 24, 2012; change below in italics.

I found an interesting recipe for chili with beans in, of all places, a calender from Classic Rock magazine. The use of tomato paste, parsley, and spices other than a quick dose of straight generic chili powder was appealing. After several experiments with this recipe, I came up with the following.

Concert Review: Def Leppard lets it rock with a rousing greatest hits live show in Hershey

4 July 2011 American Culture

The crowd was getting more than a little anxious. The speakers were pumping AC/DC’s For Those About to Rock at an ever increasing volume. On the stadium floor, the stage right audience was rising to their feet, straining their necks for a glimpse of something in the stage shadows. Then, my son leaned over to [...]

6 January 2011 My Life

Here’s one tasty and flavorful spaghetti sauce, thanks to a simple recipe and some unexpected ingredients. The foundation of the sauce comes from my mother, but according to some urban legend may have roots in an old Good Housekeeping magazine or maybe a local Lancaster (PA) Italian restaurant. Regardless, there’s few sauces like it, that [...]

Once again, as last year, I skimmed the review archives, quickly picked 25 favorites (I could have picked another 25 more) and listed them in no particular order. New this year: I’ve added pithy comments, that is, if you read the full article at Dangerdog Music Reviews. And if you venture there, you’ll get the [...]

Local business and church ‘soil’ the Ephrata linear park rail trail

7 October 2010 American Culture

I can’t recall how long the Ephrata Linear Park rail trail has been open. However, I’ve been walking it nearly every day since it’s been open. Many other people make use of it for everything from a casual walk with their dog to more serious exercise. It’s a fine and beautiful addition to our town. However, I have noticed that often, particularly after rain storms, that sections of the trail are muddied by the run off from neighboring properties.
