How to make grilled tuna steaks with an easy, savory, and spicy marinade

Tuna Steak marinadeThis week one local grocery store was offering 4oz tuna steaks for a mere $2.00.  They’re trimmed and fresh frozen, making them a good value. Since I haven’t had tuna in a very long time, I bought several portions.

All I need now is a good marinade and a hot grill. Both I have. But as to the former, I wanted something new. Something spicy and savory, easy and full of flavor.

Here’s what I came up with.

Ingredients:

  • 1/4 cup canola oil
  • 2-3 cloves of garlic, chopped
  • 2 Tbsp reduced sodium (aka light) soy sauce
  • Juice of 1 fresh lemon
  • 1/4 Tsp dry mustard
  • 1/4 Tsp paprika
  • 1/4 Tsp cayenne pepper
  • 1/4 Tsp (2 to 3 shots) Frank’s hot sauce, or your favorite hot sauce
  • 1/2 Tsp ground pepper
  • 4-6 4oz tuna steaks

Preparation:

  1. Combine first nine ingredients in a bowl. Whisk to blend well.
  2. Rinse tuna in cold water and pat dry.
  3. Place tuna in shallow bowl, cover, and refrigerate for 1 hour (or more).
  4. Heat grill to medium high.
  5. Grill tuna on one side for 4-5 minutes.
  6. Turn and grill for another 4-6 minutes.*
  7. Serve with lemon wedges (and tartar sauce for the timid).

*Cook to medium rare; center should be pink. Internal temperature should be 125 degrees. Do not overcook as the tuna can lose its flavor
